I made the scd yogurt for the first time yesterday and I'm surprised that it turned out well! I don't have a yogurt maker, and kept a close watch on it in the oven. I'm feeling a bit more "calm" today and am optimistic for the first time in a long time! So I'm fermenting a big batch of yogurt today! I've been dealing with a flare for almost a year, and it's been a rough ride. I was misdiagnosed with hemorrhoids(!) last year and was so discouraged by my lack of wellness, that I didn't seek a second opinion until it got pretty bad. 3 months ago I was formally diagnosed with U.C. and now I'm tapering off prednisone, taking Lialda, dicylomine, and Rowasa.
Anyway, if I understand her correctly, Elaine says that we must not consume lactose because it feeds the harmful bacteria in our gut. In making the yogurt, we provide a full 24 hr fermentation to allow the beneficial bacteria to eat all the lactose in the yogurt. SO my question is this: If the beneficial bacteria like to eat lactose, why can we NOT consume it (Lactose)?
