Vitamin B-12 can be elevated from too much supplementation, but you might be a person who can not process non-methylated b-12 (cyanocobalamin).
My B-12 was as over 2,000 too. I stopped all vitamin supplements (had high folate too). It took about
a year for my B-12 levels to finally get within the lab ranges. I get plenty of B-12 from my diet. If you choose to supplement, consider a methylated version.
FYI. I do not have Crohn’s (my niece does which is why I am hanging around here) but I have celiac disease and Hashimoto’s Thyroiditis.
