Sorry to hear you are so unwell. I really hope you are being put on a biologic or some other form of treatment, with CRP so high.
Yes, they should check your metabolite levels of imuran, and adjust your dose.
The question about ferritin is very important. In inflammatory conditions like Crohns, the body produces a hormone called hepcidin which causes iron to be stored, rather than available. It's thought to be a response by the body to stop invading bacteria from using iron to grow.
So people with Crohns can have very high ferritin levels (stored iron), and still be low in iron...
Your numbers indicate high levels of inflammation.
