I honestly stole this idea from a Food Network show... but I left off the pie crust on the bottom :D and made it into..
Tomato "Pizza"
1 Large ripe red tomato, sliced into 6 rounds
6 slices of mozerrella cheese to top each tomato slice
sprinkle of garlic powder, pepper, and a dash of oregano on each piece
drizzle of olive oil
sprinkle lightly with parmesan cheese
Bake at 350 degrees for 10 minutes
YUM!!!!
Makes 2 - 3 servings of deliciousness :D

This will be dinner tonight with a nice tossed salad and jumbo glasses of iced tea. Bet my hubby won't even miss the crust! I know I won't! Thank you...Joni

Let me know how he likes it! I heated up a piece for my non-diabetic daughter when she got home and she LOVED it!! She said it tastes just like pizza!! I can't wait to make it again :O)
