It's easier to say what I
don't eat: nothing made with flour (so no bread, pasta, cake,
cookies, etc.), potatoes, rice, carrots. I eat almost all other vegetables, almost all leafy greens, most kinds of meat/chicken/fish, eggs, cheese, berries a couple of times a week but not melons (melons drive my blood sugar too high).
I'm serious. If you read Bernstein's Diabetes Solution, you will understand that having better control of blood sugar to more near normal levels will probably eliminate complications down the road.
