I had bought some frozen pollock filets last month but I didn't really care for them when I made them, so there were three more frozen ones in the package waiting and waiting. Each filet is rather small, just one serving. I had an "aha!" moment when I was planning dinner yesterday. I used them to make fish cakes! This is what I did.
I put them in the food processor with chopped onions and then turned the mixture into a bowl and added about
2 tablespoons of regular mayo, one egg, a few large spoons of Bob's Red Mill Wheat Bran and also Flaxseed Meal, some chopped up cilantro, salt and pepper and a sprinkling of lemon juice. Mixed it all up and formed five patties which I slowly sauteed in a small amount of oil. (Slowly, because the fish was raw.) Turned several times until both sides were golden a little crispy. They were really tasty. I put some horseradish sauce on mine and my husband put some Tabasco on his.
This is basically what I do when I make crab cakes. I don't use crackers as a filler in those either. I use the bran, flaxmeal or even almond meal as a filler.
