Here's an idea for salad that doesn't appear to be a salad. Instead of a traditional salad in a bowl with oil and vinegar, try a plate with bite-sized pieces of different raw vegetables like: all colors of bell peppers, mushrooms, cucumbers, tomatoes, baby spinach leaves, broccoli florets, cauliflower, celery, artichoke hearts (available in jars). You might add a few unsalted almonds, walnuts, cashews, peanuts or pistachios.
A mix of three or four different ones will give you a daily variety. You do not have to put oil and vinegar on them unless you want to; just nibble from the plate along with your usual dinner.
Lately, we've been eating fresh herbs, too (I wrote another post about
herbs.), so I also put some cilantro, basil and mint sprigs among the veggies.
For a light lunch, you might make up a plate of these and also another one with regular cheese wedges or slices and some tuna or chicken salad.
Beans can be healthy but they are rather carb-laden so you do have to be careful about
how much you eat. Otherwise, a cold, marinated bean salad made with some of the veggies (and maybe some tuna) mentioned above chopped fine with olive oil and vinegar or lemon juice has a lot of good nutrients.
