This is basically what I do and I encourage others to chime in here and tell everyone how they prepare soup, any kind of soup!
ingredients"first part"
- roasted chicken pieces with skin and bone or just chicken meat
- half an onion, sliced
- a couple of celery stalks with leaves, chopped
- a few garlic cloves, chopped
- a few baby carrots or a large carrot
- some beans (I used a can of white beans.)
- chopped cilantro and/or parsley and spinach leaves
"second part"
- tumeric, paprika, curry powder
- lemon juice
- 2 or 3 chicken bouillon cubes
- some dashes of Tabasco
Saute all of the ingredients of the first part except the cilantro and parsley. Take half of the sauteed ingredients and blend them together with some water - Do NOT blend the skin and bones. Put the skin and bones into a large saucepan. Pour the blended mixture into the large saucepan and put in the other half of the ingredients from Part One including the cilantro, parsley and spinach.
Add the ingredients from the second part and simmer it all together with enough water to a consistency that you prefer. Before serving, take out all the bones and skin.
This will be a thickened soup and very substantial. Be careful not to use too much tumeric because it can be bitter. Asian or Indian food stores sell tumeric in larger quantities than supermarkets and it's cheaper, too.
