Hello Ruth and welcome to the Diabetes Forum. I wish I could help you with your questions! I don't know of any pocket-size carb count available. I guess I would suggest Googling it to see what comes up online or going to a bookstore to see what they have.
I haven't heard of Carbquick but this is what I've found:

ion is more complete than other sites and it has a nutrition list.
What I've done at home is use almond meal, coconut meal (flour), and wheat bran in different combinations to make biscuits or the wheat bran alone to make pancakes. Protein powder is also another ingredient a lot of low-carbers use.
