Last night I got the 'baking bug' (having been away from my bakery for over three weeks!) and looked for some recipes that would be 'healthy' for my daughter who is nursing a new baby. I put together something that was pretty tasty and doesn't look too evil. Are there any nutrition experts out there who can let me know if these are ok?
Grind 2 cups of oatmeal to oat flour in the blender - pour out on to a sheet of wax paper
Chop 1/4 c almonds in blender, add to oat mixture. Add 2 TBS. Sesame seeds, 1/2 tsp. cinnamon
Add 1 tsp. soda and 1/2 tsp. baking powder to other dry ingredients.
In blender smoosh 5 brown overripe bananas, (frozen then thawed seem to work best)
Cream together 1/2 c. sugar, 1/3 c. butter in a bowl by hand (exercise!!!
)
Add 1 egg and mix until creamed together
Dump in dry ingredients, mix a bit then add on cup of plain oatmeal.
Drop by teaspoonfuls, PAM on
cookie sheet or parchment paper, 350ยบ oven, 12 to 15 minutes.
This recipe makes four dozen
cookies. They are soft and taste like banana bread. I know that oatmeal is one of the only 'good for you' carbs we need for lowering cholesterol and such and hoped these might be a healthy alternative to 'real'
cookies. What do you think?
