Eating correctly isn't like living in a dungeon. I still have real ice cream once a week. The high fat content slows down the sugar absorption and 1/2 cup is a real treat. I put it in a highball glass and eat it with a baby feeding spoon so the fun lasts a bit longer.
If you will read back in the posts you will find lots of ways to make good food that's great for your blood glucose. Some of my favorites, now that warm weather is coming, are veggies on the grill. Take raw veggies, like zucchini, and slice in long thin slices. Drizzle with a good olive oil and sprinkle with garlic powder. Grill over a hot flame until the oil sizzles... Yummmmm! You can do this with peppers, broccoli, lots of stuff! The oil helps your body absorb the vitamins and helps make the garlic stick.
Chicken breasts, lean burgers, pork steaks, lots of different choices are better on the grill. I put olive oil on all of them to enhance cooking. Salads made with parboiled cauliflower in place of pasta with lots of olives, peppers, onions and a nice Italian dressing are great. I also use spinach, collard and mustard greens along with romaine for my crisp green salads. Iceburg lettuce is just crunchy water to me. I keep blocks of inexpensive motzarella cheese in the fridge at all times. A one inch cube with 18 peanuts will fix a hunger attack for almost two hours and barely budge your blood glucose...
