I have eaten half a loaf of bread with potatoes, cakee and ice cream for desert, and tested 1hr,2hr and 3 hr just for the heck of ti and still am uner 140.

You sure you are diabetic? If I ate half a loaf of bread, potatoes, cake and iceream I'd be in a coma. And rice is a no-no for a diabetic. Because if you are being truthful on your bloodsugars, it wouldn't be anywhere close to those readings if you were diabetic. I only got above 140, One Time, and that was within 2 weeks of being diagnosed and before my diabetic dietician classes. If you manage to keep under 140, what are you before you eat? Near comatose levels? Only thing I can think of...
