How do I control the carbs I take in. I find it hard to just take a small amount and am getting scared that I may end up on insulin if my numbers keep climbing. I am scared and not sure what to do.

I know what you are going through. I just went through something similar during a procedure for my knees. Over the course of 3 weeks I had to have some people stay with me as I was not to get up unless absolutely necessary and no standing to cook. In my case, my friends all eat heavy carb (starches, breads, and junk food). Even though I gave them directions on how to prepare meals I wound up eating what they gave me. One of them was headstrong and firmly believed she knew what I had to eat to mend.
Still, overall, it is up to us to take control. Ultimately, I made some folks mad when I eventually ended up refusing to eat what they served. I have enough trouble controlling my bs with out eating like them.
Follow the advice given here (especially Lanie, Jeannie, and Jim, etc.) and you won't go wrong. Have to talked with your roommates about your diabetes and how you have to eat fewer carbs or no carbs than they do? Sometimes they don't know they are eating like that and may come around.
As for ending up on insulin--it's not that bad. I switched to insulin 10 months ago and while I'm still working on getting my numbers down to "normal" levels, my overall health has improved quite a bit.
