Hi there, since I'm not on insulin, I can only answer from what I've read about
, not from experience. You're probably gaining weight from the insulin. Insulin is the hormone that will make you gain weight. If you're adjusting the insulin to the amount of carbs it seems like it's self-defeating to me. And if you're cutting down on carbs, then you're getting lows from overestimating the insulin dose, just as you're saying. No one "needs" a starch at a meal. This is an idea we all grew up with though. That's when we called them "roughage". These starches today are marketed as whole grain especially for fiber and yes, we need fiber but you can get fiber from vegetables and leafy greens. So, you need to adjust your insulin down if you're cutting back on those starches. Be assured that if you're eating a variety of veggies, leafy greens and some fruit you have all the fiber you need. Take supplements if you think you're missing out on some nutrients but don't think you have to eat a starch with every meal. I'm 62 and that's what was drummed into our heads back then.
