I really don't know the impact differences between the mashed potatoes and the acorn squash with the brown sugar combo
in me. It may affect different people differently, so I honestly don't know but I suspect the squash would have more carbs (and cause more of a rise) simply because it's a root vegetable and the fact that I put the brown sugar in it. And counting the fiber would be grabbing for straws because I highly doubt the fiber would draw out the spike significantly. My excuse though is that I only make it twice a year, Thanksgiving and Christmas. Too bad the holidays are so close. So, I choose between that and mashed potatoes. For dessert there was regular deep dish apple pie which I would normally love but I ate the cheese cake I made instead with 1/2 sugar and 1/2 splenda. I think I felt guilty because of the squash. Now I need to get back on my old schedule of exercise and walking. Nasty weather and shopping and getting ready for the holidays made me miss nearly a week.
