This is a variation of a recipe posted a couple of years ago here (I think) by a friendly haggis shepherd from Scotland
Basically, you cut up cauliflower into bite-sized florets and steam or boil slightly and drain well. Then pour them into a casserole dish. Also at this point, I tossed in some minced onions and a handful of red and green bell pepper pieces to make the color more festive. In a saucepan, melt grated cheddar with about
half a cup or so of cream or half and half (I used half and half.), about
a spoon of mustard, salt and pepper and whisk until melted. Take off the stove and whisk in one egg. Then, pour cheese mixture over cauliflower and bake at 350 for about
30 minutes.
Low carb and tasty.
