Hello GrammyG and welcome to the Diabetes Forum! I am on a very low-carb diet but not the paleo diet. Actually, I'm not sure I know what the paleo diet includes (or excludes).

seven years ago here on HW, a type 1 member who happened to be from Scotland introduced me to Dr. Richard Bernstein's plan. Dr. Bernstein is a type 1 himself as well as a medical doctor.
In any case, I'll tell you first what I don't eat:
I don't eat: potatoes, rice, anything made with flour or sugar, most fruit.
I do eat all other veggies, leafy greens, nuts, yogurt, eggs, cheese, meat/poultry/fish.
I use wheat bran and ground flax seed meal to make muffins and pancakes.
I have not had any problems with kidneys or other things related to my diet; in fact, I've had excellent lab results. I take metformin because I'm insulin resistant and even on a low carb diet, my blood sugar
still will go higher than normal if I'm not exercising every day for half an hour or so. That's been hard for me to keep up in the past couple of years, so my doctor has me on metformin.
