1 small cauliflower head cut into chunks
3 minced garlic cloves
2 eggs
1/2 cup cheddar
1/3 cup Greek yogurt
1 teaspoon salt, pepper sprinkle
2 egg whites
1. Preheat the oven to 400.
2. Steam cauliflower until tender; transfer to food processor and pulse with garlic until smooth and creamy
3. Transfer all this to a mixing bowl and add the two whole eggs, cheese, yogurt, salt and pepper and mix.
4. In a separate bowl, beat the egg whites till stiff and slowly fold this into the cauliflower mixture.
5. Coat a muffin pan with cooking spray and fill to the top with the cauliflower mixture.
6. Bake for 20 to 25 minutes until golden brown. Remove from the pan and set on a rack to cool.
