The food you've written is fine. To avoid boredom, you can switch out vegetables and eat fish (if you like fish), or pork and still be consistent. Consistency helps keep the blood sugar more level, then you can have some leeway for a 'special' treat that won't upset the balance as long as it's not a regular habit, like everyday. Also, making sure you're eating enough and not starving yourself is important, although it's ok to have a morning or afternoon when you're busy and don't have time to eat as you normally do but then get back on your usual plan when you can.
If you like cheese, you can make little quiches with veggies, cheese and eggs. You can use those little ramekins and bake them and keep extras for breakfast or even a snack. Or, you can use a pie dish and just eat slices.
