I've been making a cucumber/lime/mint drink which really beats the heat. There are a few steps involved but the outcome is worth it, I think.
1 large cucumber, peeled and cut into chunks, or about
4 of the small cukes*
2 limes
a handful of fresh mint if you have any in the garden - and this is optional but really good for taste
Puree the cucumber pieces with a few fresh mint leaves in a food processor or a NutriBullet or a blender with some water. Strain this into a large measuring cup pressing the liquid out of the pulp as much as possible. Put the pulp into another cup. Re-strain the cucumber liquid again into a 2 quart pitcher. (Use a regular mesh strainer or cheese cloth.) Squeeze the juice out of the two limes into the pitcher and fill the pitcher with water to make almost 2 quarts. Best served ice cold.
* I peel the cucumbers if they have a waxy coating. Otherwise the peel is good and healthy to leave on but it will add more to the pulp and make straining longer.
What we now do is mix the pulp with plain yogurt which creates another interesting side to a meal.
Both are refreshing ways to deal with the summer heat.
