An A1c of 5.6 is equivalent to about
an average of 108 blood sugar - which includes all numbers from morning (fasting), before and after eating, etc. In other words, it's a very good average. It doesn't fall in the "pre-diabetic" range. Read this from the Mayo Clinic:

Please don't worry.
If diabetes runs in your family and
if you've had high blood sugar results in the past, like an A1c of 6.0, averaging about
120, or higher, then you may be leaning toward diabetes in the future. If none of this is the case, there are no worries for you now. But because pregnancy causes so many different hormonal changes in the body, it's in your best interest to eat a balanced meal plan of nutritious fresh food, staying away from fast food and too much sugar. You're eating for your new baby as well, so you want to make sure to eat healthy food.
You asked if the A1c can change drastically within a year or two. Maybe but only if the person suddenly starts eating lots of carbs and gains a lot of weight. It would be a big change from his/her previous lifestyle and I doubt you would fit into that.
I am also prone to anxiety (long story) so I understand what you're saying. Be sure to express how you're feeling to your doctor, too.
