As for lunch I love making something big on Sundays and then using left overs for lunch, this week it was chicken cashew chilli, very good :)

Today, my MIL made sauerkraut and pork (lean only) for lunch. She stews kraut and pork for several hours. We ate over a small portion of potatoes. Kraut is high in fiber (two cups, 12 g fiber, 20 g carb). It's yummy!!
