The Diabetes Diet book. Steam 1/2 head of cauliflower until soft. Put it into a bowl, pull the florets apart and mash them with butter, heavy cream and salt and pepper to taste. The book says this will make 4 servings with 4.8 g. carbohydrate a serving. Warning: if you boil the cauliflower as I did, it will be rather watery.
