Hi Karen, a very interesting article! Taubes is the man who wrote the article
What If It's All a Big Fat Lie?" for the NYTimes Magazine a few years ago that Fergusc talked about
. He explains the relationship between how insulin and carbohydrates affect the body's weight. I'm glad to see that he is back in the mainstream media explaining this. It took me awhile to digest (pardon the pun!
) what Bernstein said in his book but I do believe what he and Taubes say. I also think there is a distinction between a "normal" person's biochemisty and someone like me, teetering on the verge of meds for diabetes. My husband who is a "normal" just got back his lab results from his annual physical. His fasting glucose was 82 and his cholesterol was excellent - yet he eats bread for breakfast, a lot of fruit and a lot of rice with dinner
everyday. There is no diabetes in his family. He could probably lose about
10 lbs but he plays racquetball 3x a week, the only exercise he gets. I wonder what his lab results would have been if he ate exactly what I eat. In any case, I think we know now what works for us and I hope someday the ADA and the AHA will come around and accept the fact that the food pyramid is not for everyone!
