what to eat and suggested Dr. Bernstein's book
The Diabetes Solution. Please look back through our past topics here that have to do with food and recipes and you will have lots of good ideas for what to eat. Essentially, you'll eat some kind of protein (meat, fish or chicken if you're not a vegetarian), a couple of small helpings of vegetables and maybe some salad greens or salad food like cucumbers, radishes, celery. Check out the glycemic values of food; you can find lots of sources online for listings for food. The higher the glycemic value, the higher the carbohydrate it has. In general we say to stay away from "white" food (potatoes, rice, bread, cake) except cauliflower. Also, do not overeat. If you overeat the "good" food, your blood sugar can still rise more than expected. Lastly, participate in regular daily exercise of some sort as this also helps keep the blood sugar more level.
