For some meal ideas I always have a salad for supper using healthy greens, a protein like a egg, shrimp, or chicken, with thinly sliced carrots, thinly sliced seedless cucumber, peanuts, chinese rice noodles, manderine oranges, and mushrooms. It's yummy. I'm fairly naughty with the dressing. Since I can't do a vinagarette dressing I use Kraft poppy seed but not too much.
For lunches, that's my bigger meal, I do a healthy protein like fresh fish, chicken, or turkey along with it sometimes I have sweet potato and another vegetable and sometimes I make a wild rice blend or red rice.
Sometimes I make a healthy meatloaf with ground turkey and every other week I have my spagetti made with homemade spagetti sauce and ground turkey meatballs and sauteed zuchinni and mushrooms mixed in. I feel like I'm getting some comfort food eating this one.
