I've experienced the same sort of sensitivities over the years and what has helped me the most is when I watched an author/nutritionist JJ Virgin speak on PBS. She has a book out about
eliminating 7 types of foods from your diet for 3 weeks to see which ones you're sensitive to then reintroducing them one at a time. It worked for me. Sure enough some of the foods that I reintroduced caused a big reaction like increased pain or digestive issues and issues with trying to get adequate sleep.
The foods she recommends that you eliminate are:
Gluten.
Dairy.
Soy.
Eggs.
Corn.
Peanuts.
Sugar and artificial sweeteners.
I can't do caffeine. So I stay away from caffeinated products especially chocolate.
I still have a tough time with peanuts, sugar, dairy, and gluten so I rarely eat them. I eat Ezekial bread. It's a sprouted bread located in the grocery store's freezer section and suppose to be more healthy than whole wheat. It also has a lot of fiber. You mentioned how a muffin affects you. Maybe it doesn't have much fiber or the sugar might be affecting you? The baked oatmeal wouldn't work for me. I do have to make sure that my daily morning breakfast of steel cut oatmeal made with various seeds and nuts and topped with frozen bluesberries after it's microwaved each morning isn't too thick. I make enough for 5 days at a time.
