My DH and I just returned from a week in the Smoky Mountains and I'm about dead!  No one loves the Smokies better than I, but I don't know if I will ever attempt another vacation there or not. 

 

Usually it is cooler there than anywhere around but it was unusually hot this week.  We shopped until I nearly dropped but when I would get back in the car from the stores, I would nearly pass out.  Is this a sign of age or Fibro?  Maybe both!

 

Needless to say I'm glad to be back home.  My first month of school break is about over and I've traveled most of it.  My second month of July will be full of canning and freezing garden, so I don't have much rest to look forward to.  August will be here before we can turn around.  Oh well, I'm still like Scarlett O'hara..... I'll worry about that tomorrow.

Hi Shannon, glad you made it back, sorry it wasnt What you had hoped it would be. I dont even think about vacations anymore. Sounds too much like work to go on one. lol
Hope the rest of your summer isnt too stressful

Shannon, I love the Smoky Mountains too...beautiful...lived in Tennessee a few years.
Vacations sometimes can take alot out of you. I always joke that I need a vacation
from my vacation. It always feels good to come home and sleep in your own bed. A
combination of my age and fibro can do me in. I'm not a spring chicken anymore at 58.

Hope you will get some much needed rest so you can gear up for your canning:)

Vacations can take a lot out of us. The heat didn't help. Rest up and stay cool. Got a week before you start canning, take advantage of it.

Oh my, I can remember all the canning and freezing that I use to do. Many, many jars of beans because that is my favorite. I canned everything that I could. It was a lot of work, but it sure was good in the winter.

As everybody says, rest up to get ready for it. I hope that you enjoyed your vacation all in all. I am sure that you did. You will enjoy all those good canned goods and frozen foods when the season is here.

That's us fibros.... Over do it then collapse. Take it a bit easier, if you can. As for the canning... I finally gave that up. Just couldn't do it along with the wedding cakes. (and to tell the truth, I don't think my family really appreciated it!!!) That, along with the fact that the darned lids got so expensive, it seems like it's less expensive to buy canned goods on sale in the fall. The taste isn't the same but it certainly is worth it to me for my health.

I agree that you can buy veggies cheaper than canning your own, but my DH's hobby is gardening.  He has a huge garden and gives half of it away.  I feel so bad because he is a heart patient and works so hard in it.  I feel like I haven't done my part if I don't try to put some of it up for him.

 

We sure love the green beans, corn and tomato juice in the winter, but the older I get the harder the job of canning is. 

 

We had a car show to go to today and we're leaving for a few days camping after church Sunday, but after that I think I will be able to rest sometime between the canning and freezing.

If you have a large freezer, you can just stick tomatoes in there whole. When you take them out and thaw them, the skins come right off and they make great tomato sauce.

I learned that by accident last year. I could not can the tomatoes and had too many to eat. It worked great!

Sue, thanks for the information.  I have never tried that, but wondered if it wouldn't be a good way to put them in chili and vegetable soup.
