Hi, OkieSooner, and welcome to the forum. (I'm guessing you are from OK!)
You state that you are eating less these days. Did you eliminate any foods that are high in sodium? Even "normal" people can retain fluid if their sodium intake is too high. Have you been exercising and sweating a lot? You could lose water weight in this manner.
Aside from Liver Function Tests, did your doctor check for hepatitis A, B, and C? Did he check for fatty liver? There are also some autoimmune forms of hepatitis, and other liver diseases that affect the liver, like Primary Biliary Scherosis (PBC.) However, with most of these, there would normally be an increase in liver enzymes. I did have hep C for over 20 yrs. before my enzymes started elevating. Do you have any possible risk factors for hep B or C?
Some of your symptoms lead me to believe that you should be checked out by a neurologist (probably a hepatologist, too, though your PCP may be reluctant to refer you due to the normal enzymes.)
The symptoms you are having are not normal. While it may not be your liver, something is going on. I hope you will try to get a correct diagnosis.
Hugs,
Connie
