I'm not sure how your other doctor can think you have IBS? Some doctors try to throw that out there when they don't know what else to think--I sure hope that isn't what yours is saying?
Has Celiac been ruled out? One thing I would try is a food diary- noting sugars, gluten, dairy, etc; this may give you a reference point for your doctor. Does this pain get worse if you are lying down, standing up, bending over, walking around? etc? I think those are most likely to be the main offenders but try to only eliminate one thing at a time. Sounds like PPI's did nothing to stop the sourness or belching or feelings of fullness and most importantly, the throat clearing? Have you been tested for allergies? H-pylori or hiatal hernia? Thyroid? I am just throwing things out here, but also have they done the sed test for autoimmune?
I know it's frustrating to have gotten all that testing done and found nothing! Which is why I know digestive disorders are the worst, it's the process of elimination or you have to be lucky to have a doctor who knows something. Gateroparesis is incurable, but you are very fortunate if yours is managed.
DH currently is still in process of being diagnosed :-( GERD, LPR, Hiatal Hernia Lupus have been ruled out. He still clears his throat but no more sour stomach unless he eats too late at night and tries to sleep.
