Gluten is the protein in wheat, barley and rye. You can experiment with a gluten-free diet, but you'll need about a month to see if it really makes a difference. You must not eat any product that contains any amount of the three grains I listed. In India, you should be able to do this by sticking to rice and not eating any pancakes or wraps made from wheat flour. I'm pretty sure even potato dishes like samosas have wheat flour in them, same with chapuris. I'm not any kind of expert on Indian food, though.
Some people have a genetic condition called Celiac disease where they cannot digest gluten, and over years it causes damage to the intestinal tract. It takes a while to heal that damage. There are also people who are intolerant to gluten but do not have Celiac disease. It's not clear if this intolerance also causes the same damage. In both cases, the symptoms include diarrhea, fatigue, anemia, etc.
