I am in my 50's and just got diagnosed with acute ulcerative colitis on 11/28. I also have diverticulosis. I too had rectal bleeding, pain and generally feeling crappy. The colonoscopy is what you need to make a definitive dx. Yes blood is scary, but there are so many causes other than cancer. I am now on metamucil, Lialda 1.2 GM twice a day and Canasa suppositories. Some days I feel great and other days not so great, with some pain and mild bleeding. Still trying to figure out my triggers. I have given up my caffeine free diet Coke and all artificial sweeteners, plus alcohol.
Can any one comment on how long it takes for symptoms to develop after eating a trigger food???

You should take this quesiton to the UC forum. If you are new to this diagnosis you are probably still dealing with inflammation, and the pain/diarrhea/bleeding are part of the UC. It's hard to untangle food issues from all of this. Be patient and treat the inflammation.
You might want to talk to your DR about
mesalamine enemas instead of the suppositories. If your inflammation goes beyond the rectum the enema is a more effective treatment than either the suppositories or the oral meds.
