Many people's digestive tracts react negatively to spicy foods, ranging from soft stool to a burning sensation, diarrhea, heartburn, etc. This does not mean you have IBS. If you are not having other symptoms, it sounds more like you have unfortunately developed a food sensitivity to spicy foods. My best advice is that you cut back on the things that you know trigger these attacks. I know it's hard, because you love the food so much, but the alternative is a lot of time spent in the bathroom.
Also, corn is just about the most worthless food product ever--it comes out the way it goes in for everyone, which can cause some intestinal distress after you eat it.
All that said, if you are concerned about this, give your doctor a call. At the very least, they could do a stool analysis to make sure everything is normal.
