Some people with IBS have diarrhea, others have constipation. Stress can really increase the frequency of bowel movements. Also, some people just have "bad" digestive systems that react negatively to lots of different thing.
Have you tried keeping a food diary? Write down everything you eat and then any digestive issues that arise. See if you can find out which foods seem to cause the most problems. Food sensitivities "lactose intolerance, celiac disease (intolerance to gluten protein in wheat, rye, and barley products), or sensitivity to spicy or fatty foods" are know triggers in some people.
