Sorry you are dealing with that awful situation. Would you be able to get a referral to a new doc, or at least ask the current doc to do an endoscopy and colonoscopy to check things out? Sounds like those tests are really the first thing that needs to be done to get a good look at what's going on in there!!! Obviously, you know, something isn't right, and the only way to fix it is to figure out what "it" is.
As for the food and nutrition, I totally know how crackers and mashed potatoes can be like the only foods your body doesn't hate!! However, they really offer little to no nutritional value, as I'm sure you are aware. Are you able to handle water? Are you staying hydrated? My doc has recommended stuff like gatorade in the past to help w/ hydration because it has the electrolytes in it too. But, if you can't handle that, try watering it down or try the children's "version", a similar thing, I think it's called like pedialyte? Has the electrolytes too, but a smaller amount of them, as it is for a child. But the children's kind has much less sugar I hear, and should be a bit easier on the gut. Also, what happens if you try smaller meals or snacks several times a day, rather than a few larger meals? Try really bland foods though, stuff with protein would be good. I also have problems with dairy, and my dietician told me to try Ensure, or Ensure Plus, to get lots of nutrients in a small serving. That is the one brand that is not milk based, although from the look and taste of it, you would think it was. You can get the generic brand, has the same nutritional value, etc, just cheaper. I don't think that any of it tastes especially great, but drink it very cold and with a straw set kind of far back in your mouth, so you don't taste it as much. Very good way though to get some much needed nutrients. I know you said that you do need to lose weight, but the rate at which it's happening and the way in which it's happening is obviously no good. You will only continue to feel worse as your body is becoming more dehydrated and starving from no nutrition.
So, hope some of this is a bit helpful. Keep pushing your docs, whether your GI doc or your primary care, to refer you to someone else, someone who may be able to help you better, and keep asking for the endoscopy and colonoscopy. Those are pretty basic tests, usually it seems those are the first ones the docs pick to do with a patient who has GI problems! Get a new doc if you can. And try to stay hydrated, eat small meals or snacks with high nutritional value!
