You can make a soy free rice dish. I'm absolutely positive that fresh fruits and vegetables are soy free. You can make your own pasta (wheat, and otherly free). In fact, I just now started eating gluten free. I've found a wonderful Morning Glory Muffin Recipe, gluten free. I absolutely loved it. It does make a lot, I made off of one recipe a loaf of bread (just poured the muffin mix in a bread pan and kept an eye on it), and probably at least 2 dozen muffins.
As for the GERD/Acid reflux I highly live by Aloe Vera Juice. I get mine through Market America, and do the flavored ones. Straight Aloe vera juice tastes wretched. 2 ounces daily. After 1 month, symptoms improve. I had Acid Reflux so severe, I was on Prilosec, Protonix, Zantac, Nexium plus I went through a Big Bottle of Rollaids WEEKLY. I decided on a dare, to stop medication for it, and just do the rollaids with the Aloe Vera juice. With Aloe vera juice, I now have no prescription medication for it, as well as Go through a big bottle of tums only every 2 months.
