I am sure sorry that you are experiencing life with Lyme! There are quite a few things that a person can do to help themselves get through treatments, and we have many different points of view here. I am using acupuncture with herbs, homeopathic meds, Traditional & Modern Chinese Medicine to help me rid my body of these pesky little buggers.

PLEASE be careful with the coffee!! I just found out that even just drinking 3 or 4 mugs of coffee a day when you are having issues with your adrenals is like using an electric shock instrument (a cattle prod) on them. I used to survived on caffeine & nicotine for long stretches, but not any more!!
As far as the brain issues, Deejavu is right IMO. Detox bathes help me considerably with the brain fog. Although, I also suffer with decreased brain function as well. The brain needs to be exercised - at whatever level you need to use!!! When I'm really bad, I will do the circle a word 'puzzles', if I'm just a little bit better, I will switch to easy crosswords. When I'm doing a little better than that, I go one to medium crosswords & so on.
