Your symptoms sound like they are perfectly in line with a very early stage lyme infection. If your treatment started soon after your infection (sounds like yours did) and you're only one week into treatment then there's no reason to get all worried yet. Just continue to take your medication as it was written and you should start to feel better soon; there would be no reason to change from doxy at this point. Ideally you would get at least a full 4 weeks of treatment, but even if they went really conservative and you only got 2 weeks you still have an excellent chance at a full recovery (again, assuming you started treatment soon after the infection).
If you start to experience significant neurological symptoms (burning, tingling, muscle twitches, facial numbness, loss of muscle control, etc) you should probably get right back to the doctor, but otherwise just ride it out and pay close attention to your symptoms. If you still have significant symptoms after your treatment ends, or symptoms come back shortly after you stop treatment, then you can start looking into treatment with a specialist.
