Of course everyone's diet will vary but this is a generic of what I would eat. I limited gluten but didn't cut it out completely. Overall - I haven't had many gut issues either. My biggest issue has been low weight.

Air popped popcorn w/salt and 1/2 butter 1/2 coconut oil
Nuts/trail mix (good weight gainer)
Fruit (not too much, sugar!)
Veggies - carrot sticks, celery w/ almond butter
DIPS - hummus, guacomole, salsa - instead of chips you can use veggies; peppers, carrots, rice cakes, broccoli - get creative!
Breakfast
Two eggs with salsa/cilantro
Oatmeal w/cinnamon
Yogurt w/berries or granola
Smoothie's (my fav)
Hardboiled eggs (Great TO GO)
Lunch
Soups and salads are my go to lunch
Bone broths with veggies (GREAT WEIGHT GAINER, HEALS GUT)

Roast
London Broil

Sides
Green beans steamed or sauteed with garlic/ EVOO, some almonds
Roasted broccoli - FAVORITE - cook fresh florets with olive oil/ S&P @400-425F until crispy (yes, crispy broccoli!) We do that with lots of veggies
Quinoa (pref red) GREAT source of antioxidants. I highly recommend
Creamed curry coconut spinach
Sauteed veggies
Substitutions
Substitute burger rolls for tomatoes (I slice out the middle so the ends are the buns!)
Substitute tortilla shells for iceberg lettuce (lettuce wraps) You can do this eating out too - works for burritos and wraps!
Substitute crackers with rice cakes

Noodle and Co. - cheap, good portions, can sub for gluten free pasta for $2. Also has good soups/salads
Panera - good soup/salad
Sushi - in general
Seafood - in general *caution for those with HMetal
Last but not least....I want to say that I personally believe part of the reason I became ill is because I did not take care of myself. I find that a lot of folks on here describe themselves similarly. I never drank enough water ever, not even close. I would have several days a week where I wouldn't eat breakfast or lunch (like 9-5 without food). I burned myself out on many occasions working, going to school etc. etc.
Now that I'm well, I'm finding myself back into my old habits again - though not nearly as bad as before. With so many asking me for good recipes etc. I needed to reflect some on my habits and give my own self a lecture. So I went out yesterday grocery shopping and will have a good weekend of making snacks and preparing for weekly meals etc.
For many- you already do that - good for you! For me and I know a lot of others we rush rush rush! and food is a complete afterthought. If you fall into that category STOP IT! Carefully plan out meals and snacks. Start slow. Learn new recipes and take some time for yourself each week. These are still things that I DO struggle with so I need to take my own advice also but we don't want to stay sick and this will help us getting back to ourselves AND staying there.
