Vanilla Extract: Alcohol

I am guessing that I'm not supposed to use it since it is extracted in alcohol?

Can I use just a tsp. to make these awesome sugar- free cookies?

I found some raw vanilla bean to maybe use in its place, but that seems quite experimental....not sure how much to use.

I just realized that the Nutramedix Stevia (that my doc.recommended) also has 20%ethanol.

What is the deal with these? Avoid them completely? Or is it an insignificant amount?

I pretty much assumed that "no alcohol" meant... no alcohol.

Hi Binduspire, Vanilla extract is a tincture just like the many tinctures that are used here in this forum. Just yesterday I was reading on how to make my own tinctures and in the article they mentioned that Vanilla extract is made the same exact way as a tincture, thus the reason for the alcohol.

If you are concerned about the small amount of alcohol, they recommend that it be added to hot water to evaporate the alcohol. I would imagine that if you are adding the vanilla to something that you are going to bake, that the heat from the oven will evaporate the alcohol.

The alcohol should evaporate off in baking the cookies.

Besides it evaporating during the baking process - there really isn't enough alcohol in that tsp - or tablespoon for that matter - to affect anything. I've used tinctures with alcohol in them throughout my whole healing process.

Binduspire - I have long since given up looking up trying to figure out if all these food additives, preservatives and solvents are harmful or not. So I simply avoid anything other than the pure form wherever possible.

To avoid the ethanol, Ive moved to a 100% pure stevia brand called "Sweetleaf". There are other brands, but this seems to be the widest brand available where I live.

I think when you hear "NO ALCOHOL" it means do not drink alcoholic drinks. Alcoholic beverages are not good because they up your insulin levels, and are just like eating a dessert in terms of the sugar effect they have on the body. Consider alcohol a desert because that is exactly what it does to your blood sugar. The small amount in vanilla extract is not worth worrying about I don't think. That is just my oponion. And doesn't baking the cookies change the alcohol anyways? Just have a little fun... We all deserve that much. ;)
