I have a sausage hash recipe that uses sweet potatoes, is baked and then you top it with eggs - I like it best with goat sausage, but pork sausage is good too, just have to be sure it's well drained. It's all done in the oven.
I'm sure that I have some more recipes as well - I often have to have the same dietary requirements, although I need the fiber usually. If you will send me an email, I can list off some of the things that I make. Besides, I'll be better prepared as I'm getting tired tonight!!
And what about
almond butter instead of peanut butter? It takes a bit of getting used to, but we (hubby and I) actually prefer the taste now!
You can use a good protein powder and mix the almond butter into it with a little water mixed in to help get it all mixed together.
And although there is a bit of fiber in them, don't forget rice cakes! They are so versatile!! Spread some almond butter on one and a touch of honey! Or top it with refried beans!
