This sounds like possible food allergies. I went onto the Subway site and found out what was 'safe' for me to eat, as I have a known soy allergy and all their breads, except one, contain soy.
The temperature swings during the day could be from a number of things, but I'd be concerned about
your adrenals with the pacing you mentioned. It's not a "classic" symptom, but it could be a clue that your adrenals are struggling. If so, they need to be tested with a 3 or 4 time a day saliva collection test - it's the only accurate testing for adrenals. If your doctor won't use the saliva test, you can order that yourself as well.
