The sugar-free is the most important. I also do dairy-free because people seem to say that casein is inflammatory, but personally I haven't had that experience.
I also do carbs-free, but if you want to add carbs eat complex carbohydrates. They'll be converted to glucose more slowly by your body.
Lastly, I've enjoyed doing Wahl's Paleo. It's a Paleo diet tailored for autoimmune diseases. The author designed it for herself as she had progressive MS, and her recovery on it is fascinating. Check out her TED talk:
