That's because carbs still break down in sugars. Complex carb foods still process slower than processed foods laced with sugar, your body can handle it better, but eating too much high carbed foods everday can still fatigue you and cause inflammation.
A good substitute for snacks is pumpkin seeds, sunflower seeds, peanuts. Low fructose fruits like apples and peaches. Vegetable shakes with the blender.
I still eat some high carb foods here and there in moderation, but I have completely cut out processed foods with sugars.
If you eat a good wholesome whole food dinner, most likely you won't feel starved throughout the day. That means a dinner with vegetables, good portion of meat, maybe some fruit.
Americans struggle so much with diet because most don't have a clue what's healthy and what's not, majority of food at the grocery store is garbage. I recommend listening to Chris Kesser on the Paleo Diet.

A vegetarian or vegan diet can be a good option short term, but you'll find that there's a lot of vitamins, omega, and protein fats you can't get from vegetables, that you get directly from meats.

You cut out sugars and processed foods all together, you're on a healthier diet right off the bat!
I'll say this, there's still vegans who have money that can still stay on a vegan diet, like leonardo dicaprio, but they have to precisely watch that they get enough protein, omega fats, and vitamins every day. That means taking a lot of vitamins, omega fat supplements, and powder protein shakes every day. You stop taking any of these at one point, you're in trouble.
Problems also come in when they've found a lot of these protein shakes are high in contaminents

A lot of these so called healthy synthetic protein powders are nothing you should use on a daily basis as a "snack either." Regardless of people claiming them to be healthy, organic protein powder is probably cleaner and better, but it's still a synthetic, aka a processed food, remember that! Because I know a lot of people that use them as a snack as well.
People also easily get fooled by "organic" and "gluten free" labeled processed foods. Just because a box of pop tarts say they're organic does not make them healthy, they're still high in sugar and processed.
