Responding to a line I caught in passing, it's not so much about
what your body needs as it is what your body will accept. Better yet, it's about
the degree to which can tolerate its responses to these foods. Granted, you don't want to take the "starve it out" approach, because it's simply not health, but it's difficult to abide by a whole, rounded diet when it causes your fungal issues to flare. You guys know what I mean. Herxes, flares, whether bacterial, fungal, etc. It sucks.
My diet is similar to yours, and it's been this way for the past couple years. I'm starting to wonder if it's growing off the bare minimum. I mean, it's obviously being kept alive, but I worry it's thriving in an environment of meat and vegetables. I try to eat a moderate amount of food, but maybe it's too much? The problem is the need to feel satiated. It's difficult, with just vegetables.
Are the carbs adding up? Is it FODMAPS? Too much protein, feeding off the excess glucose? Ketosis is a thing, but the body (brain) ultimately needs glucose, so sugar is still there, somehow.
I've tried so many things, prescript
ion and otherwise. It makes me wonder if the strain-complex has become resistant to conventional methods? Months of Diflucan, Itraconazole, garlic, probiotics. The only thing I didn't take with real compliance was Nystatin, but how much good will it do if a) my issue is systemic and b) the other options didn't seem to get rid of it.
It's a multi-pronged approach that is required, with the right meds/supplements and timing, and even knowledge of what exactly the disproportion is in your gut. What's wrong and where, what are these problem strains of yeast, parasites, or whatever that is throwing the whole system out of sync?
I see people on Candida diets --- certain flours, nuts fruits, brown rice, or what have you --- and I just question how or why some other people can get so much more impaired that they can't eat those things?
It's a scary thing, unfortunately, and... yeah, I'm sorry for spewing. I just saw the post and immediately related to OP's diet.
It's just like mine.
Chicken, fish, eggs, grass fed beef once a week, healthy oils, and every low-carb vegetable under the sun or born from the dirt: spinach, kale, broccoli, asparagus, brussel sprouts...........................................
I can't get better, unless I introduce new things into my system that will give rise to a different collection of flora, but I don't know how to do that without risking more of my health and/or what little semblance of sanity there is left in my skull, because, just as the "starve it out" doesn't work so too doesn't the "well, just throw X, Y, Z in there and see what happens."
ANYWAY... I made my yearly crap post.

I have a couple questions for the room:
1. What do you guys know about
sugars remaining in fermented foods (kefir, sauerkraut, or kimchi)? I've read that not everything is consumed during the fermentation process.
2. I've seen caution warned against "wild" strains of yeast in things like, again, kefir, sauerkraut, and kimchi. How do you feel about
that?
But, again, I think there are different imbalances and different levels of impairment, not that it's a contest. I wasn't always this way. I used to be able to eat an apple, sweet potato, or handful of nuts. Things just went awry, and I don't know the WHY or the HOW to putting it all back together again.
Just another case of a really on-the-cusp ailment, growing in incidence, that's not getting the research necessary to help people get better. Though, it's... all just a, using the word again, a complex... a domino effect... one thing leads to another, then you're left with a mess.
Anyway, my brain is tapped out.
