Garzie - Yes! Great to see this kind of comment. I am not sure I ever mentioned it, but I went to Cornell for Nutritional Sciences. What a better way to say that food is medicine haha. So what I do everyday is I take down some homemade chicken soup with it. It's got a handful of great ingredients, and sometimes I will add so many other veggies that it becomes a plethora of vegetables lol. Right now we don't have any celery because it's tough to find where I'm at so I try my best to replace it. I do try and be careful with ingredients so it's not affecting the way the Amox Clav works either. I will list them here and as a matter of fact, I will list my original recipe and directions if anyone cares (I'll do my best). I like to cook lol.
Recipe - Forest’s Chicken Soup - 2018-01-01 at 12.00 AM
Ingredients
- [ ] 2 tablespoons avocado oil or olive oil
- [ ] 6 cloves of garlic, minced
- [ ] 1 yellow onion, diced
- [ ] 4 large carrots, thinly sliced
- [ ] 4 celery stalks, roughly chopped
- [ ] 2 tablespoons fresh grated ginger
- [ ] 2 tablespoons fresh grated turmeric (or 2 teaspoons ground turmeric)
- [ ] 8 cups low sodium chicken broth
- [ ] 1/2 - 1 pound boneless skinless chicken breast
- [ ] 1 - 2 teaspoons freshly chopped rosemary
- [ ] 1 - 2 teaspoons freshly chopped thyme, stems removed
- [ ] 1 teaspoon sea salt or pink Himalayan salt
- [ ] Freshly ground black pepper (
- [ ] 1 cup brown rice
- [ ] 1 cup frozen peas
- [ ] 1 cup frozen corn
Instructions
- [ ] Remove frozen items from freezer so they can properly thaw first.
- [ ] Cook chicken breast in the oven. Then cook the brown rice on the stove. With a medium sauce pan, boil 2 cups of water, then add brown rice. Let it simmer on low (around 3 out of 10) for 25-30 minutes, or until most or all of the water is soaked up.
- [ ] Next, place a large dutch oven or pot over medium high heat and add in oil. Once oil is hot, add in garlic, onion, carrots and celery. Cook for a few minutes until onion becomes translucent.
- [ ] Add in grated ginger and grated turmeric. Sauté for 30 seconds to let the spices cook a bit, then add in chicken broth, chicken breast, rosemary, thyme, salt and pepper.
- [ ] Bring soup to a boil, then stir in brown rice. You’ll want the chicken to be covered by the broth so make sure you stir them down to the bottom. Reduce heat to medium low and simmer uncovered for about 15 minutes.
- [ ] If you find that you don't have enough broth, feel free to add more. Add in frozen peas and frozen corn. Cook for another 10 minutes or until the corn and peas are completely unfrozen. Everyone likes their soup differently so adjust if you’d like!

Right now, we're replacing the celery with broccoli and zucchini. Sometimes they're be corn and/or peas, it all depends. Not trying to have a lot of grains but I did pick them up again and don't see to notice feeling worse from them, so long as I offset them with other foods containing lots of micronutrients. I also am watching my fat consumption during use as too much fat could get in the way of how much of the Amox Clav I am absorbing, but I can assure you that I am absorbing it, just ask my gut, it hurts lately no matter what I do! But it's not the worst. I've had pain most of my life, so to me, it's one of the easiest symptoms compared to the others.
