Taking those binders 2 hours after and 2 hours before any meds or foods should prevent the absorption of nutrients - at least that's what I've been reading. So you should be safe on that.
Avocados, quinoa, nuts (& nut butters), olive oil, mangoes are all high in nutrition and in calories (

So including them in your diet should help. Although bananas are also mentioned, they also increase inflammation, and since Lyme is an inflammatory disease, it's not smart (IMO) to eat foods that are known to increase inflammation, but some people eat them without any issues. It could be something to try (watch to see if it affects you for a couple of days after eating just one banana).
It's hard to think of all of these things on your own, especially when we are sick or a bit frightened of what our bodies are doing, that's why I love forums...and especially this one!

I still eat oatmeal every morning, even though it's probably high in calories, it's medicinal for me. I add in honey (for pollen type allergies), flax (Omega 3 & 6 plus fiber), cinnamon (to help with insulin resistance & more) and coconut oil (for all of it's goodness!). A splash of raw goat's milk and it's about
the healthiest meal of the day for me!
