I asked my LLMD just that. He said that when he started his practice, he accepted insurance. He found that the insurance companies would always try to dictate what he could do and what he could not do. Furthermore, he said that even when ordering tests, he was limited by the kind of tests that he could order. He had to be creative in his diagnosis so that the insurance company would cover it. When treating a patient, the treatment that he prescribed would be heavily influenced by what he knew the insurance would cover and what they would not.
It got to the point that he felt that he could not treat his patients the best way that he knew how so he just stopped taking insurance. This also allowed him to use not just prescriptions but also natural supplements and herbs in the treatment of his patients. He says he doesn't regret it and that he often gets patients that other doctors have given up on (I think he was talking about me (grin))
