I found this article(
www.ncbi.nlm.nih.gov/pubmed/3298708) that states it doesn't mess with the blood glucose as much as sugar does.
So while it's better to use than sugar, it's not as good as using something like Stevia which doesn't affect the blood glucose at all.
So how would they taste with a little cinnamon on them? Cinnamon is known to level out glucose spikes!
