chloe - I so wish I had someone to help me with the cooking, but it's all up to me.
sueg - I make almost everything I eat from scratch, due to food eliminations and food sensitivities. I find even the gluten free products often contain sugar and rice flour, which I can't have. So here's some of the things I make/eat.
Breakfast: oatmeal, gluten free pancakes, millet grits cooked in almond milk and stevia added for sweetness, homemade granola, buckwheat cereal, puffed millet cereal, breakfast cake (made with almond flour, egg, cinnamon, coconut milk, & stevia), homemade granola bars (made with mashed chickpeas, almond butter, dried cranberries, shredded coconut, stevia), gluten free toast with almond butter (once in a while).
Lunch: all kinds of veggie soups, pea soup, lentil soup, tuna or chicken salad on gluten free bread, salads, chickpea/kale/red pepper dish over quinoa, black bean/veggie dish, sweet potato oven fries, leftovers from dinner.
Dinner: all kinds of meat, squash, turnips, parsnips, carrots, other veggies, quinoa to replace potatoes or rice, chicken cesear salad, shrimp salad with red onions and pine nuts and dijon dressing, stir frys, hamburgers made with oatmeal instead of breadcrumbs (no bun), bbq pork chops with only oil and spices, broiled chicken, chicken dipped in gluten free flour and fried with onions, roast beef.
Snacks: nuts, seeds, veggies, guacamole, quinoa crackers, chia seeds soaked in coconut milk, vanilla, and stevia, protein shakes.
There is still a lot to eat, but it's the preparation that gets me down. It feels like my life revolves around food! Good luck.
